Menu by Chef Mike Treviño de Luis

  1. Foie Bombons, five cereal toast,  caramelized walnuts and Saba.
  2. Valdeon cheese mousse vol au vent  and plum  mostarda.
  3. Watermelon gazpazho iberico ham chip.
  4. Beets and Cana de cabra cheese Trifasico, quince, frisse and crispy radish.
  5.  Escabeche, Japanese style with manila clams, pei mussels and rock shrimp.
  6. Steak Tartare, wagyou beef, brioche toast, quail egg, caper berries withcrème fraiche emulsion.
  7. Charred Spanish octopus, potato foam, chilli oil.
  8. Wild mushroom ravioli, mushroom veloute, mushroom paper and air.
  9. Slow cooked suckling pig sliders, ginger aioli and sautee spinach.
  10. Spicy tiger shrimp, wrinkle  marble potatoes and aMona mojo picon.

About the event partners: 


Chef Mikel Treviño de Luis is an award-winning chef from Bilbao, Spain, who has worked with some of the top chefs in the world. Soon his special aMona sauce will be launching in Whole Foods, and next year he will be opening a specialty Spanish market with restaurant.

TasteArtNYC, provides clients with a multi-sensory immerse experiences, through taste and scent. Therefore each serving, cocktails and food plates, are a taste of art.

Join Visual AIDS for Pedagogical Legacies, a public conversation about influence, archive, eduction, history, and curiosity within the context ofEphemera As Evidence curated by Ricardo Montez and Joshua Lubin-Levy. Moderated by Visual AIDS Programs Manager Ted Kerr, the conversation will begin with comments from the contributing students, researchers and curators involved in the exhibition, exploring the various ways in which learning, teaching, knowing, and not knowing impact life, art, and scholarship. It will then evolve into a larger discussion with the assembled audience.
